Method:
Place all ingredients into a slow cooker or large pot on the stove. Add flour and toss through ingredients until they are well coated. Add stock and thyme. If using a slow cooker, cook for approx. 4 hours on high or 8 hours on slow – alternatively bring to a simmer if cooking in a pot over the stove and allow to cook for 1 – 1.5 hours, or until vegetables are cooked through and beef falls apart.
Allow to cool and either using a stick blender or a blender, puree until smooth.
