Popcorn Chicken Bites with Sweet Chilli Swirl

Method

In a bowl, combine chicken, yoghurt, garlic, cumin, paprika, chilli, and salt. Leave for 30 minutes to allow the chicken to marinate

Meanwhile, prepare spiced crumb by pulsing all ingredients in a food processor until it resembles bread crumbs

Coat individual chicken pieces in the spiced crumb mixture.

Cooking methods:

Frying:

To cook chicken, preheat oven to 180ºC / 350ºF. Heat a large frying pan over a high heat. Add a small amount of good quality olive oil to the pan - enough to almost cover the base. In batches, add your chicken to the pan. Cook until golden, then flip and repeat. Once golden on all sides, place on a lined baking tray and into a preheated oven for 15 minutes, or until cooked through

Oven:

To cook chicken, preheat the oven to 200 ºC / 400ºF. Place chicken bites evenly onto a lined baking tray. Lightly drizzle or spray with a good quality olive oil. Place into the oven for 15-20 minutes, or until golden and cooked through.

Air fryer:

To cook chicken, preheat air fryer to 200ºC / 400ºF. In batches, place chicken bites evenly in a single layer in the air fryer basket. Lightly drizzle or spray with a good quality olive oil. Cook for 8-10 minutes, flipping halfway through, or until golden and cooked through.

 

Prepare the Sweet Chilli Swirl by combining chilli, garlic, lime juice, and rice malt syrup. Swirl this mixture through the yoghurt

 

Note

For extra juicy chicken, marinate overnight!

You can freeze your uncooked chicken bites, and save them for a later date! You’ll just have to cook them for 15 minutes instead, to ensure they’re cooked through
