Dice your chicken breast into approx. 2x2 cm pieces and place in a large bowl. To your bowl of prepped chicken, add remaining ingredients, and combine thoroughly, coating each piece.
To assemble, add chicken to a skewer by piecing the centre, using approx. 6 pieces on each. Repeat until all 8 skewers have been assembled. Cover and place into the fridge to sit and marinate.
To cook, preheat your BBQ or grill to high heat and lightly oil the grates. Place the chicken skewers on the grill and cook for 8-10 minutes, turning 3-4 times during cooking. Check the chicken is cooked by slicing open the largest piece, ensuring it is not pink inside.
Once cooked, remove from grill, and serve along side our grilled veggie salad.
NOTE:
- if you’re using bamboo skewers, we recommend soaking these in water for at least 30 minutes prior to assembling, to prevent them from burning during cooking process.
