BOWL SERIES | Teriyaki Noodle Bowl

METHOD:

  • To prepare your chicken, cut into bite sized pieces. Place in a bowl and into the fridge, covered until required.
  • Prepare your noodle bowl veggies by finely slicing the cabbage, cucumber, carrot and snow peas. Set aside either individually or combined – whichever you prefer. Roughly chop the bean shoots, snow pea sprouts and coriander, and set aside as well.
  • To cook your noodles, place in a large wide bowl and cover noodles with boiling hot water, ensuring they are submerged. Cover with a lid or large plate, and sit for 6-10 minutes, until tender but still chewy (this will vary depending on which type of rice noodle you choose to use). Once cooked, drain noodles and rinse under cold water and set aside.
  • For the dressing, add all ingredients to a small jar or bottle. Combine thoroughly, and set aside to use later.
  • To prepare your teriyaki chicken, in a small bowl, combine soy sauce, sugar, apple cider vinegar, sesame oil, garlic and ginger. Seperately, combine the water and corn starch to create a slurry. Add this to the sauce mixture, and whisk to combine.
  • Heat a non-stick pan on low-medium heat. Add a small splash of olive oil and your prepared chicken. Once cooked through and slightly browned, remove chicken from pan and into a bowl. With the pan still on, add the teriyaki sauce and stir constantly to ensure this doesn’t burn on the base of the pan. The sauce with thicken quite quickly. Once thick enought to coat the back of a spoon, add cooked chicken into the pan and coat thoroughly. Turn off the heat.
  • To assemble your noodle bowl, begin with rice noodles as your base. Add on top your teriyaki chicken, selection of finely sliced veggies, sprouts, coriander and crushed peanuts. Drizzle over a small amount of your dressing, and a squeeze of fresh lime juice.
