Combine all dry ingredients in a bowl.
In a separate bowl, whisk together milk, egg and melted coconut oil. Add wet ingredients to dry ingredients and incorporate thoroughly. Add banana to bowl used for the wet ingredients, and using a fork, mash until no lumps appear. Add mashed banana to batter, and stir to combine.
Heat a pan on low-medium heat and add a small amount of coconut oil. Once heated, spoon a tablespoon amount of batter for each pikelet, until spread evenly throughout the pan. Cook until small bubbles appear on the surface. Flip pikelets and cook for a further approx 2 minutes until cooked.
Remove from pan, and repeat process until all your mixture is used.
To serve pikelets, create small single serve stacks using a toothpick with your choice of berry on top, or create a ‘help yourself’ platter with choice of toppings, fresh fruit and honey.
