Directions
Cook/scramble the eggs and put aside. In a non-stick pan add butter, diced onion and garlic.
Heat until onion begins to go clear and garlic is aromatic.
Add protein of your choice (diced chicken/pork/beef/tofu and continue to cook until browned.
Add capsicum, peas and corn.
Continue to cook for further 3-5mins and then toss through cauliflower rice, scrambled eggs and Tamari sauce.
Season with sea salt & pepper. Keep on low heat for 1-2 minutes gently stirring until cauliflower rice is warm. Serve with fresh chopped spring onion.
